Mayonnaise
- For a quick homemade mayonnaise using just a hand blender with the blade attachment and a jug you can create a vortex which will help the ingredients emulsify easily.
- You'll need 1 egg, 1 cup of vegetable oil, 1-2 tablespoons of white wine vinegar and salt and pepper to taste.
- Put the egg in the bottom of the jug with the vinegar and half the oil, then place the blender on top of the egg and start blitzing on a low speed until the ingredients come together.
- Once combined, slowly add the remaining oil, whilst still blitzing.
- If the sauce appears a little too thick add a drop of water. Season with salt and pepper.
Aioli
Use the same technique and quantities as for mayonnaise but substitute minced garlic for the vinegar. You want a thicker consistency for aioli, so don't add any water.
Hollandaise
- The perfect sauce to go with asparagus (now in season) and eggs.
- Cut 175g of butter into cubes and melt in the microwave in a glass jug using the medium-low power setting.
- The white that settles at the bottom you don't want, just use the clear, gold liquid above, which is clarified butter.
- In a tall jug, combine 3 egg yolks with some lemon juice, 1.5 tablespoons of water and a pinch of salt and cayenne pepper then whizz them together, before slowly adding the hot clarified butter over 45 seconds.
- Pouring the butter in slowly prevents you scrambling the eggs. Serve immediately whilst still warm.
